1 cup basmati or jasmine rice
2 cups water or vegetable stock
1/2 cup traditional tomato sauce
1tbsp oil (I used my homemade garlic oil)
1 packet Sazon Goya packet
1/2 tsp dried cilantro
1/4 tsp paprika
A pinch of chilli powder
1 medium shallot diced
1/2 Roma tomato diced
1 clove of garlic minced
Salt and pepper to taste
Heat oil in a sauce pan, once oil is ready add the shallots. Cook for 4 minutes. Next add your garlic and tomato. Cook for five minutes.. Now add the rice, seasoning packet, and spices. Stir to combine. Cook for 2 minutes constantly stirring. Add stock and stir.
Bring to a boil and reduce to low. Cook until all water is evaporated. About twenty minutes or so. Make sure you stir every couple minutes.
Once done remove from burner and keep covered for 5 minutes. Serve warm -enjoy-
